Vineyard

The vineyard is south facing, in the municipality of Massafra to about 280 slm The grape harvest is carried out tentatively in the first week of September, taking into account the climatic conditions of each vintage.

Winemaking

The soft pressing of the grapes is followed with stemming inoculation of selected yeasts, which leads at the beginning of alcoholic fermentation. The skin maceration occurs at a temperature between 27 and 30 ° C and lasts for about 10 days.

Refinement

Aging takes place for 18 months in steel silos. After bottling, there is a further refinement in the bottle for about 6 months, which is spent in our basement.

Tasting notes

A wine of intense ruby ​​color with violet hues, garnet, and orange with aging in which the nose is the captivating blend of spicy notes, the delicate scent of red fruits and plum jam. In the mouth it is balanced, large volume, with hints of ripe fruit and tannins.
Alcohol: 15 °C + 2 °C Sugar performed.

Serving

To drink in combination with starters of salami and cheese hard cheese. Excellent with meat sauce dishes, grilled meat and game.
Accompanies the best dishes with a good fat matrix, due to its tannins can easily clean the mouth.
We recommend that you open the bottle one hour before serving and serve in large glasses at a temperature around 18 ° C.
